2 packagesChicken Meatballs
not frozen

0.5can of pineapple tidbits

1 cuppineapple juice
canned, Do not use fresh

⅓ cuprice wine vinegar

¾ cuplight brown sugar
packed

3 Tbspketchup

2 tbpssoy sauce
or tamari

1 ½ tablespoonscornstarch
For the Cornstarch Slurry, dissolved in tablespoons water

2 dropsred food coloring
optional, natural
Instructions
Step 1
In a large pan, sautée chicken meatballs in a little olive oil. Remove meatballs and set aside.
Step 2
Combine pineapple juice, rice wine vinegar, brown sugar, ketchup, and soy sauce. Add sauce to pan and heat on medium heat until the sauce begins boil, add meatballs and ensure the are heated though. Add cornstarch slurry, mix well and allow to thicken. Serve over jasmine rice or whatever you prefer.
