1green bell pepper
or Turkish green pepper, finely chopped
¾ cupTomatoes Okra & Corn
drained, with corn removed

1 cupChili Ready Diced Tomatoes
drained

½ teaspoonpaprika

¼ teaspoonground cumin
optional for added depth

¼ teaspoonred pepper flakes
or Aleppo pepper, adjust to taste

3eggs

Fresh parsley
or dill, chopped, for garnish

Instructions
Step 1
1. Heat the olive oil in a medium skillet over medium heat.
Step 2
2. Add the chopped onion and green pepper. Sauté for 5 to 7 minutes until softened.
Step 3
3. Stir in the drained Margaret Holmes okra and tomato mixture (with corn removed) and the drained Kroger Chili Ready Diced Tomatoes.
Step 4
4. Add paprika, cumin if using, red pepper flakes, and a light pinch of salt and pepper. Stir well.
Step 5
5. Reduce the heat to medium-low and let the mixture simmer for about 10 minutes, stirring occasionally, until thickened and the flavors meld. Taste and adjust seasoning as needed.

6. Make small wells in the tomato mixture and crack the eggs directly into the wells.

7. Cover the skillet with a lid and cook gently for 5 to 7 minutes, or until the eggs are cooked to your preferred doneness.

8. Remove from heat. Garnish with fresh parsley or dill.

9. Serve hot with crusty whole-grain bread or your favorite side.
