Sausage fennel & Sun-Dried Tomato Pasta

Ingredients
2 servings
3onion sausages
casings removed

1red onion
small, finely sliced

1garlic clove
minced

1chili
small, finely chopped, optional, to taste

1 Tbspfennel seeds

6sun-dried tomatoes
chopped

1 Tbspsun-dried tomato paste

pasta
of your choice

olive oil

1 cuppasta water
Reserved

parmesan cheese
grated, to serve

freshly ground black pepper
Instructions
Step 1
Boil Pasta:
Step 2
Cook pasta in salted water until al dente. Reserve 1 cup of the pasta water, then drain and set aside.

Cook Onion:

Heat olive oil in a large pan over medium heat. Sauté red onion until soft.

Add Aromatics:

Stir in garlic, chili, and fennel seeds. Cook for 2–3 minutes until fragrant.

Cook Sausage:

Add sausage meat, breaking it up into a mince-like texture. Cook until browned and golden.
Step 9
Make Sauce:

Add sun-dried tomato paste and chopped sun-dried tomatoes. Stir in a splash of pasta water to form a sauce. Simmer briefly.

Combine:

Add the cooked pasta to the sauce. Toss well, adding more pasta water as needed to loosen the sauce.

Top with grated Parmesan and black pepper. Serve hot.
