1 Tbspbacon grease

1onion
chopped

1 poundhot Italian sausage
If you don’t like it hot or have ground beef or turkey use it

5 lbTomatoes
Dice, whole, or crushed canned tomatoes and sauces are fine to use in this recipe, I actually picked mine and roasted them in the oven everyone has this opinion

3 Tbspgarlic paste
If you don’t have it use what you have and as the sauce cooks taste it and add more if you want

pepper

Italian seasoning
or basil and oregano
Instructions
Step 1
Heat Dutch oven on medium heat. Put in 1 tablespoon of bacon grease whenever it’s warm enough add your onion and brown it. This should take about 5 minutes.

Step 2
When your onions are done remove them from the Dutch oven and set aside.

Step 3
Put the sausage in the Dutch oven and cook until it is done.

Step 4
Now that you sausage is done deglaze your pot with the juices form all your tomatoes.

Step 5
As soon as the pots deglazed put all of your tomatoes and the cooked onion in.

Step 6
Now it’s time to lower the temperature to just simmering and let the heat and time do its job. I cooked mine almost 4 hours.

Step 7
Once the sauce is to the consistency you prefer remove from the heat.
Step 8
Remember this is for a big family and/or friends gathering because it makes about 10 cups of sauce.
