For the Soup

2 Tbspolive oil

1 Tbspbutter

1onion

1carrot

2 stickscelery

6 clovesgarlic

1 tspfresh thyme leaves

rotisserie chicken

1 batchchicken stock

200gnoodles

salt
to taste

Instructions
Step 1
In a large pot, combine the rotisserie chicken carcass, carrots, celery, yellow and red onions, ginger, garlic, thyme, parsley, and peppercorns.
Cover with water and bring to a boil. Reduce heat and let it simmer for at least 1.5–2 hours, skimming any foam from the surface. Strain the stock through a fine mesh sieve, discarding the solids. Set aside.

Prepare the soup
Heat olive oil and butter in a large pot over medium heat.
Add the diced onion, carrots, and celery, sautéing until softened (about 3-5 minutes).
Stir in the minced garlic and fresh thyme, cooking for another 1–2 minutes until fragrant.
Pour in the homemade chicken stock and bring to a simmer.
Add the noodles and shredded rotisserie chicken and let it simmer for 10-12 minutes.
Season with salt and freshly cracked black pepper to taste

Ladle the soup into bowls and garnish with freshly chopped parsley.
Serve with toasted crusty bread slathered in butter.
