Instructions

Prep

Step 1
Wash and dry produce; trim green beans
Step 2
Peel and dice sweet potatoes into 1/2 inch pieces. Zest and quarter lemon.

Mash sweet potatoes

Step 3
Place potatoes in a pot with enough salted water to cover by 2 inches. Cover and bring to a boil; cook until tender, 15-20 minutes
Step 4
Drain and return potatoes to pot. Mash with sour cream and 2 tbsp butter until smooth. Season with salt, pepper, and garlic powder.

Make honey butter

Step 5
While potatoes cook, soften 4 tbsp butter in a bowl. Stir in honey, a pinch of salt, and chili flake.

Cook pork

Pat pork dry; season lightly with salt and pepper and then rub all over with BBQ seasoning
Step 7
Heat oil in a large pan over med-high heat. Add pork and cook until browned and cooked through, 4-6 minutes per side.
Step 8
Remove from heat and rest, covered with foil

Cook beans

Step 9
While pork rests, in the same pan, cook beans in pan with oil, salt and pepper until lightly browned and starting to soften. Add a few tbsp of water and cover, steaming until tender.
Step 10
When done, remove from heat and toss with lemon zest, juice, and 1/2 tbsp of butter. Season with more salt and pep if necessary.

Serve

Step 11
Slice pork chops cross-grain. Divide potatoes, beans and pork chops. Dollop pork with honey butter.
