Step 1
Preheat your oven to 190°C/gas mark 5
Step 2
Season and pan-fry the onion in half the olive oil over a medium heat for a few minutes until softened.
Step 3
Add the garlic and carrot to the frying pan. Fry until the garlic starts to brown.
Step 4
Add chopped tomatoes, water, gravy granules and lentils to the pan. Simmer for 10 minutes until the lentils are cooked. (Add more water if it gets too dry)
Step 5
Meanwhile, cook the chopped potato in a pan of salted water for about 10 minutes until softened. Drain, season with salt and pepper, then mash the potato with the remaining olive oil.
