Step 1
Heat a lidded, oven-proof dish on the hob. Brown the sausages in the olive oil, remove and set aside.
Step 2
Saute the onions, carrots, garlic and pepper in the same pot.
Step 3
Add the wine and reduce by half
Step 4
Return the sausages to the pot and add the lentils, stock and herbs.
Step 5
Bake in the oven for 20 minutes.
Step 6
Serve and garnish with more chopped parsley and a drizzle of olive oil.
