Instructions
Step 1
Step 1 In a blender, combine cilantro, scallions, jalapeños, avocado, sunflower seeds, spinach, garlic, lime juice, and water. Blend until smooth, adding more water as needed for a sauce-like consistency. Season with salt to taste and set aside.
Step 2
Step 2 Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and keep warm.

Step 3 Preheat a grill or grill pan over medium-high heat. Toss shrimp with olive oil, smoked paprika, salt, and pepper. Grill for 2-3 minutes per side until pink and opaque.

Step 4 Toss the pasta with the green sauce, parmesan, and Boursin cheese until well coated.
Step 5
Step 5 Serve pasta topped with grilled shrimp and garnish with extra cilantro.
