We always have open ramen without seasoning packets around, but this would probably taste just fine with chicken flavored! Add any veg or protein you have on hand for an added boost! Even some chicken nuggets and frozen veg will work lol.

2 Tbspbutter

2 Tbspall purpose flour
depending on how thick you want your sauce

1 tspdried oregano
or Italian seasoning

1 tspblack pepper

½ tspgarlic powder

¼ tspchili powder

⅛ tspground ginger

¼ tspground nutmeg

½ tspsalt

½ tspcayenne pepper
optional, or to taste

Parsley flakes
optional, to taste

2 tspketchup
or 2-3 ketchup packets

½ tspworcestershire sauce

1 ¼ cupmilk

½ cupwater
hot, to thin the sauce

1American cheese slices
or 1/4 cup shredded cheese of your choice, I like shredded sharp cheddar

1 blockramen noodles
any flavor, discard seasoning, optional

salt
to taste

Instructions
Step 1
1. Melt butter (2-3 tbsp) over medium-high heat (on my gas stove that's about 5.5. If you are adding veggies at all (celery, carrots, onions, peppers, mushrooms would all be great) add them now to get some nice texture and color.

2. When butter is fully melted, make a roux to your desired thickness with all-purpose flour (the thicker the roux, the thicker the sauce). Whisk to combine each tbsp until smooth (1-4 tbsp, depending).

3. When the flour smell is gone and the roux is smooth, add the herbs and spices and whisk to incorporate and allow their fragrance to strengthen. Once that's done, about 1 minute, add your ketchup and Worcestershire.

4. Add the about 1/4 cup at a time and whisking until thickened before adding more.
Step 5
5. Taste and season with more salt and pepper, to taste.

6. Add the hot water as necessary to thin out the sauce to your desired thickness. I just use a 12 oz. Cup of hot water and add/whisk as necessary.

7. When you're happy with taste and texture, add the cheese, whisking to incorporate.

8. Add the noodles, turn the heat down to medium-low, and cover. (Medium low on my stove is about 3.5-4)
Step 9
9. Cook, covered for about 2-3 minutes (not allowing the sauce to boil too much), then uncover and cook another 2-3 minutes until the noodles pull apart and are a little under your desired doneness. They will continue cooking in the sauce.
Step 10
10. Plate or bowl up, garnish as desired, and enjoy!
