Instructions

For the rice

Step 1
Add oil to a large sauce pan, turn burner to medium heat.
Step 2
When hot, add garlic and saute about 30 secs.
Step 3
Add onions and saute for about 3 mins, or until translucent.
Step 4
Add all the rice, and toast about 3 minutes.
Step 5
Add the chopped tomatoes and tomato paste. Stirring well.
Step 6
While stirring, add the water and bone broth along with the cumin and chili powder. Mix very well.
Step 7
Turn the stove down to simmer. Put lid on the sauce pan, and let rice simmer for about 40 minutes.
Step 8
Take off heat and let stand about 5 minutes. Fluff and set aside.

For the refried beans (while rice simmers)

Step 9
Add oil to a medium sause pan, turn burner to medium heat.
Step 10
When hot, add onions and jalapeño, saute about 3 mins, or until onions are translucent.
Step 11
Add beans, taco sauce, taco seasoning, and about 1/4 cup bone broth.
Step 12
Once beans are warm, mash them with the back of a fork, or a potato masher until desired smoothness. (Or, you can use a mixer/blender/immersion blender at this step.)

Add flax seed and the rest of the bone broth, cook while stirring about 3 mins or until thickened.

For the guacamole

Step 14
In a medium mixing bowl, add the avocado and mash with the back of a large fork.
Step 15
Add in the remaining ingredients, and mix well. Set aside.

To make the Burritos

Step 16
In a small mixing bowl, stir together sour cream and Greek yogurt. Set aside.

Heat tortillas in a large fry pan on medium heat for about 1 minute on each side. Set aside.

Assembly

Put a tortilla on a plate. Just off the middle towards the top, add 1/4 cup each of rice, beans, then guacamole in a pile.
Step 19
Add 2 tbsp of the sour cream mix, about 1/3 cup lettuce, 2 tbsp cheese, and 1 tbsp tomatoes to the pile.
Step 20
Take the sides of the tortilla and meet them over the pile. Push down gently and pull ingredients towards the outsides of the tortilla. Wrap tortilla. Repeat with all tortillas.
Step 21
Spray a large fry pan with olive oil. Heat pan on medium heat, add burritos seam side down. Toast burritos one each side about 3 mins, or until golden.
Step 22
Serve.
