Instructions
Step 1
Preheat the oven to 350°F. Generously coat 18 muffin cups with cooking spray.
Step 2
In a large skillet, crumble and cook the sausage over medium-high heat until it's about three-quarters browned.
Step 3
Add the onion, reduce the heat to medium-low. Continue to cook the sausage, stirring occassionally, until the sausage is cooked and the onion is soft. Set the skillet aside to cool.
Step 4
Crack the eggs into a bowl and add the salt, black pepper, and chili powder. Whisk to combine.
Step 5
Add the Cheddar and bell pepper and stir them in.
Step 6
When the sausage has cooled slightly, add it by the spoonful and stir until it's all mixed together.
Step 7
USe a 1/3 cup measure to scoop the mixture into the muffin cups.
Step 8
Bake them until they're puffy and just barely set, 20 to 22 minutes.
Step 9
AFter they are out of the oven, the casseroles will start to flatten just a little bit within a minute or two. This is normal! Run a knife around the edge of each muffin cup and serve them warm.
