Instructions

Step 1
Preheat the oven to 220°C/200°C (fan)

Boil a kettle.
Step 3
Heat a hob-safe oven-proof casserole dish, with a matching lid, with a drizzle of olive oil over a high heat

Grate chestnut mushrooms, then peel and grate the garlic. Add to the dish with a knob of butter.

Add tomato paste and mix.
Step 6
Add chopped tomatoes, vegetable stock mix, balsamic vinegar, dried oregano, and boiled water. Mix well.
Step 7
Bring to the boil over a high heat, season generously with salt and pepper, cover, and bake for 30 min.
Step 8
Remove from oven and stir. Break the spaghetti in half, add it to the dish, and mix well.
Step 9
Return to oven, cook for 25 min until spaghetti is tender.
Step 10
Prepare caprese salad: chop tomatoes, tear mozzarella and basil, drizzle with olive oil, season with salt and pepper.
Step 11
Serve spaghetti with grated cheese and salad on the side.
