Poor man's falafel
I love falafel. When lucky I get them from a vegan palestinian restaurant, or from a lebanese place nearby, but they cost more than making them from scratch. Worth it, but I dont have that much to afford them as often as id like! So, here goes an unorthodox, quick, easy, and filling cheapskate version that stretches the chickpeas with a handful of split red lentils and adds other herbs to the parsley. Not traditional, but it fills you up. Oat flour is binding agent as canned chickpeas are not best to keep shape.

Step 1

Rinse chickpeas and keep aquafaba. Boil lentils. Put everything in blender and BLEND... shape and either pan fry or oven bake depending on how you feel. Pan fry in shallow olive oil. Do a test and if they crumble add more oat flour or a little bit of aquafaba. It will bind everything together
