Instructions

Step 1
Wash chicken thighs, cut into bite-sized pieces, blanch briefly in boiling water with lemongrass, onion, and ginger. After blanching, rinse with cold water and drain.
Step 2
When the chicken is lightly golden, add 1 tablespoon fish sauce, 1 tablespoon oyster sauce, 1 tablespoon dark soy sauce, and 1/2 tablespoon sugar.
Step 3
Stir-fry over high heat until the chicken is evenly colored.
Step 4
Add a little water, cover, and simmer for about 10 minutes until the chicken is cooked through.
Step 5
Add green chilies and uncover, cook until the sauce thickens and evaporates. Serve hot.
