Instructions

Step 1
Prepare and slice carrot and broccoli. Mince some garlic and ginger, slice scallion, set aside.
Step 2
Blanch the sliced carrot first in boiling water for about 2 minutes; further add in broccoli for under a minute or until slightly tender and dark green. Shock it in ice water and drain thoroughly.
Step 3
Slice beef top sirloin into small strips, transfer into a bowl. Marinate sliced beef with baking soda, cornstarch, oyster sauce, sesame oil and cooking wine. Mix well and let it sit for at least 15 minutes.
Step 4
In a separate small bowl, stir together the oyster sauce, hoisin sauce, chicken powder, water, black pepper and cornstarch until the cornstarch is fully dissolved.
Step 5
Heat a wok or a large skillet on high heat and add the cooking oil. When a wisp of white smoke appears, toss the marinated beef into the pan. Cook for about a minute continually moving the beef so it browns on all sides, but is still rare. Once the beef is seared, simply remove from the heat.
Step 6
With the remaining cooking oil in the skillet, simply put in minced garlic and ginger to stir, further add in sauce mixture to stir on medium heat. Add the broccoli and carrot to cook for an additional minute.
Step 7
Finally add in pre-cooked beef to mix, garnish with sliced scallion, and remove from heat. Serve immediately.
