1 cupfideo pasta
or 7 oz package of thin vermicelli or broken spaghetti

1 tablespoonbutter
or 2 tablespoons neutral oil like avocado or vegetable oil

2Roma tomatoes
medium, quartered

0.5white onion
medium, chopped

2 clovesgarlic
peeled

1 ½ cupswater
for blending

1 teaspoonchicken bouillon
or 1 bouillon cube, crushed
1 teaspoontomato bouillon
or 1 bouillon cube, crushed

½ teaspoonSalt
to taste

1 cupschicken pieces

Instructions
Step 1
Toast the pasta: In a medium pot, melt the butter over medium heat. Add the fideo pasta and stir frequently until the pasta turns a golden brown color, about 3-5 minutes. Be careful not to burn it.
Step 2
Prepare the tomato sauce: In a blender, combine the tomatoes, onion, garlic, and 1 1/2 cups water. Blend until smooth.
Step 3
Strain the sauce: Pour the blended mixture through a fine mesh strainer into the pot with the toasted pasta. Use a spoon to press the solids and extract as much liquid as possible.
Step 4
Add bouillon and salt: Add the chicken bouillon and tomato bouillon cubes (or powders) to the pot. Stir to combine. Add salt to taste.
Step 5
Simmer the soup: Add more water to the pot if needed to cover the pasta and tomato mixture — usually about 2 to 3 cups total liquid, but adjust as you go. Bring the soup to a gentle boil, then reduce heat to medium-low. Cover the pot with a lid.
Step 6
Cook and monitor: Let the soup simmer, stirring occasionally, until the pasta is tender and the flavors are well combined, about 8-10 minutes. Check periodically to ensure the soup doesn’t dry out. Add more water if it gets too thick.
