Step 1
Preheat and prep: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.

Mix dry ingredients: In a large bowl, whisk together the rolled oats, chocolate protein powder, cocoa powder, and salt.

Mix wet ingredients: In a separate, smaller bowl, mix the peanut butter, maple syrup/honey, water/milk/egg white, and vanilla extract until well combined and smooth. If your nut butter is very thick, you can gently heat it in the microwave for a few seconds to make it easier to mix.
Step 4
Combine: Pour the wet mixture over the dry ingredients. Stir thoroughly with a spatula, making sure every oat flake is coated. It will be a thick, sticky mixture.
Step 5
Bake: Spread the granola mixture in an even, thin layer on the prepared baking sheet. For more clusters, you can press it down firmly with the back of your spatula.
Step 6
Bake: Bake for 15 minutes. Stir the granola and then spread it back out evenly. Bake for another 5-10 minutes, or until the granola is fragrant and feels dry to the touch. Be careful not to burn it—the edges can brown quickly.
Step 7
Cool: Remove the baking sheet from the oven and let the granola cool completely on the pan without stirring. This is a crucial step for forming crunchy clusters. Once cooled, break it into chunks.

Stir in chocolate chunks
