1 x 120gcan tuna in water
drained

¼ cupchickpeas
mashed cooked

2 tablespoonsavocado oil mayonnaise

1 ½ teaspoonsfresh lemon juice

1 ½ tablespoonsred onion
finely diced, or scallion

1 ½ tablespoonscelery
finely diced, or cucumber

salt
To taste

pepper

chili flakes

1 tspDijon mustard

2slices whole wheat bread

¾ cupbaby spinach
Instructions
Step 1
Drain and rinse the chickpeas, then process them in a food processor until granular but not mashed.
Step 2
In a bowl, combine the tuna, processed chickpeas, mayonnaise, lemon juice, onion, celery or cucumber, and chopped spinach.
Step 3
Mix thoroughly until creamy but textured.
Step 4
Season with salt, pepper, and optional mustard or chili flakes to taste.
Step 5
Toast the whole wheat bread slices.
Step 6
Spoon the mixture over the toast and serve open-faced or sandwich-style.
