1 teaspoonground sumac

¼ teaspoonground coriander

½ teaspoonground cumin

¼ teaspoondried chile flakes

kosher salt

freshly ground black pepper

2garlic cloves
minced

6tomatoes
small, cored and cut into 1/2-inch-thick slices

⅔ cupbasil
half roughly chopped and half torn or left whole

⅔ cupmint
half roughly chopped and half torn or left whole

⅔ cupflat-leaf parsley leaves
half roughly chopped and half torn or left whole

hot sauce
such as sriracha

1 cupchickpeas
cooked, canned is fine

0.5red onion
small, thinly sliced

2 tablespoonsred wine vinegar

extra-virgin olive oil

Flatbreads
Slightly Tangy, preferably freshly cooked and still warm
Instructions
Step 1
Mix together the yogurt, cucumber, and fresh herbs. Season generously with salt, black pepper, and hot sauce.
Step 2
Let the sauce sit for at least 15 minutes and up to an hour, then taste and adjust the seasoning.
Step 3
Toss the chickpeas, onion, vinegar, and parsley leaves. Season with salt and black pepper, add olive oil, and toss again.
Step 4
Arrange a layer of marinated tomatoes on a platter, and pour any accumulated juice over the tomatoes.
Step 5
Drizzle or dollop the yogurt sauce onto the tomatoes and tumble the chickpea salad on top.
Step 6
Serve with freshly grilled flatbreads.
