Instructions

Step 1
Chop shrimp into small pieces and combine with lime juice and seasonings.
Step 2
Heat half olive oil over medium heat. Saute onions & garlic for about 1 minute, then add shrimp. Cook about 5 more minutes. Set aside.
Step 3
Layer tortilla with cheese, cilantro and shrimp. Fold in half.
Step 4
Heat remaining olive oil over medium low heat and fry tortilla on each side until golden & crispy. Enjoy!
