With a few substitutions, I was able to keep 4 quesadillas to 400 calories & pack over 35 grams of protein! The egg whites and mushrooms are two high volume foods that will help keep you fuller for longer while keeping the calories low. You can use pork chorizo or soyrizo; the macros are almost identical.

Step 1
1. Finely dice the onions and mushrooms. The smaller the pieces are, the more they will blend in with the soyrizo.
Step 2
2. Add the chorizo to a hot pan and break apart. Cook for 3 minutes.

3. Mix in onions and mushrooms and cook for 3 minutes. (Depending on the brand of soyrizo, you may need to add oil spray to your pan. If there is no grease, lightly spray your pan)

4. Add in egg whites and cook until everything is cooked thoroughly.
Step 5
5. To assemble the quesadillas, add 14 grams of fat free cheese and 1/4 of your soyrizo mixture.
Step 6
6. Add the quesadillas to the comal. Cook for 2-3 minutes on each side or until golden brown.
Step 7
7. These can be enjoyed alone or with toppings of choice - salsa, non fat Greek yogurt, and/or light sour cream.
