For the salad

1 blockHalloumi

200gsourdough
or ciabatta

300gtomatoes

1cucumber
roughly chopped

1red onion
very thinly sliced

fresh basil
torn
For the dressing
Instructions
Prepare the bread
Step 1
Tear or slice the bread into bite size to chunks. Heat a drizzle of olive oil in a frying pan toast the bread until golden brown and crisp turning regularly
Poach the halloumi
Step 2
Bring a saucepan of water to a low simmer. Gently poached the halloumi for 10 minutes until tender.
Step 3
Drain and set aside to cool slightly before pulling and turning into chunks.
Make the dressing
Step 4
In a small bowl, whisk together the mustard, red wine vinegar, and extra virgin olive oil. Season to taste
Assemble the salad
Step 5
In a large bowl, toss together the bread, onions, tomato, basil, and onion. Pour over 2/3 of the dressing, toss and leave to one side
To serve
Step 6
Let the salad sit for a while while you pull the halloumi into chunks. Top to salad with the halloumi Andrew's over the remaining dressing full
