Instructions

Step 1
Sauce: 1/2 cup soy sauce, 1/4 cup gochujang, 2 tbsp sesame oil, 4-5 minced garlic cloves, 1 tbsp grated ginger
Step 2
Cucumbers: Thin slice cucumber. Mix 1/2 cup rice vinegar, 1/2 cup water, and 1 tbsp of sugar. Add the cucumber slices and let them sit.
Step 3
Beef: Brown the ground beef, drain the fat. Pour the sauce over the beef and let it simmer for 5-10 minutes.
Step 4
Spinach: Throw the entire bag of spinach into the pan with the beef in last min of cooking and stir.
Step 5
Assemble: Portion rice into containers. Top with beef and spinach. Pack the pickled cucumbers and shredded carrots separately.
