Instructions
Step 1
cook the pasta as per packet instructions, reserving 1/2 cup of pasta water
Step 2
in a food processor or using a stick blender, blend the tofu, almonds, sundried tomatos, roasted peppers and fresh basil until smooth
Step 3
if the mixture is to thick, add a bit of pasta water to reach your desired consistency. toss with cooked pasta and serve
