Sheriff Don's Meatloaf

This recipe is a close replica to the renowned and very popular go-to meatloaf dinner served at McKees Pub Restaurant, located at the world famous Bandon Dunes Golf Resort, in Bandon, Oregon. I was privileged to acquire this recipe from the head chef himself, and I made a few tweaks, such as replacing soda crackers with Ritz brand crackers and adding more heavy cream than the original recipe called for. This meatloaf dinner was traditionally served with garlic mashed potatoes and seasonal vegetables such as roasted asparagus spears, carmalized brussel sprouts, or cauliflower. It was understood that resort guests never went away from this meal, still hungry!

Instructions

Step 1
In a medium frying pan, add olive oil, celery, carrots, and mushrooms. Cook until vegetables are tender but not mushy. Remove from heat and set aside.

In a large mixing bowl, combine meats and crackers together and mix thoroughly by hand
Step 3
Add in oil, cooked vegetables, cilantro, and garlic, then mix together by hand.
Step 4
Next, add butter, cream, and egg yokes, then mix together by hand until thoroughly blended.
Step 5
Shape blended mixture into 3 loafs and place into separate oil-coated bread pans or baking dishes
Step 6
Preheat oven to 325°F. Set loaf pans on a baking sheet in the oven, then add some water in the bottom of the baking sheet (about 1"). Cook for 15 minutes.
Step 7
In a small mixing bowl, blend together the glaze ingredients. After the loaves have baked for 15 minutes, remove the individual loaf pans and top each loaf the glaze mixture.
Step 8
Return loafs to the oven and bake for 30-40 minutes more (until the loaf is no longer pink inside). Remove from oven and allow to set for 5-10 minutes before serving.
