Instructions
Step 1
1. Cook rice in advance (white or brown). Keep warm.

2. In a skillet, heat butter/olive oil. Sauté onion until soft.

3. Add mushrooms and cook until browned and tender.

4. Stir in garlic, then sprinkle flour over mixture and stir well

5. Slowly pour in vegetable broth while stirring until sauce thickens.

6. Reduce heat and stir in sour cream, Dijon mustard, paprika, salt, and pepper.

7. Spoon stroganoff mixture over rice in bowls.
Step 8
8. Garnish with fresh parsley if desired.
