Instructions

Step 1
Soak the glass noodles in warm water for about 30 minutes. Drain well so they’ll cook chewy and soft in the microwave.
Step 2
In a small bowl, mix together: 2 tbsp soy sauce, 1 tbsp cooking oil, 1 tbsp sugar, 1 tbsp corn syrup, ½ tbsp minced garlic, 1 tbsp oyster sauce, a little of black pepper
Step 3
Slice all vegetables into medium-thick strips so they keep some bite. Thinly slice the beef so it cooks quickly.
Step 4
In a large microwave-safe bowl, add the soaked noodles and 1 tbsp cooking oil. Pour in half of the sauce and mix. Place vegetables on top, but do not add spinach yet (it will soften too much). Cover with a microwave-safe lid or plastic wrap. Microwave for 6 minutes.
Step 5
After 6 minutes, add spinach and microwave for 2 more minutes. Pour in the remaining sauce and mix gently. Finish with 1 tbsp of sesame oil and 1 tbsp of sesame seeds. Now you have glossy, flavorful Microwave Japchae ready to enjoy!
