One Pan Red Curry Dumplings
Adjust For Your Phase
• The Escape Plan: Add 60 g raw white rice per serve on the side, or swap with 60-70 g quinoa/brown rice if preferred.
• The Off Season: Add 60 g raw rice per serve (or brown rice/quinoa), just like in Escape Plan.
• The Sprint Phase: Omit rice entirely. You can reduce dumplings to 3-4 per person and increase vegetable serve.

Instructions
Step 1
Heat a large pan. Lightly sauté garlic, onion, and mushrooms.
Step 2
Add lean beef mince and cook until browned. Stir in red curry paste.
Step 3
Add reduced-fat coconut milk, tamari, and half the chilli oil. Simmer 3-4 minutes.
Step 4
Add bok choy and dumplings. Stir gently, cover, and bake (or simmer covered) until dumplings are heated through.
Step 5
Top with sesame seeds, fresh coriander, and the remaining drizzle of chill oil.
