Instructions
Step 1
Heat olive oil in Dutch oven. Add onions to hot oil. Suate until caramelized.
Step 2
Add garlic to Dutch oven. Suate until aromatic.
Step 3
Add rosemary and salt to Dutch oven. Continue to suate onions and garlic ~3 minutes.
Step 4
Add 15oz of chicken broth, carrots and zucchini. Bring to boil until carrots are soft (~10 min).
Step 5
Blend 1 15oz can of cannelleni beans and a splash of broth (~1 OZ) in food processor.
Step 6
After carrots are softened, add mushrooms and bean broth to Dutch oven. Simmer for 5 minutes.
Step 7
Add tortellini. Simmer for 7 minutes.
Step 8
Ready to serve. Garnish with freshly grated cheese (mozzarella/ cheddar) and fresh oregano.
