Instructions
Step 1
Saute onion and garlic for 3 to 4 minues until softened
Step 2
add chpped tomatoes. Simmer 10-15 minutes until tomatoes break down and soften.
Step 3
Add tofu and remaining ingredients.
Step 4
Blend until smooth. Add vegetable stock if desired for texture.
Step 5
Simmer for another 5 to 10 minutes.
Step 6
Season with balsamic vinegar, or nutritional yeast if desired
Step 7
Serve warm. Top with fresh basil, or croutons if desired.
