Instructions
Step 1
Take sausage out of casings and sauté until cooked through
Step 2
Remove sausage and set aside
Step 3
Sauté onion and carrots
Step 4
Once onion is softened add garlic and sauté for a minute.
Step 5
Add tomato paste and sauté for a couple of minutes.
Step 6
Add wine and simmer until the liquid is reduced by about half
Step 7
Add flour. Mix
Step 8
Add chicken broth and turn heat up stirring consistently until slightly thickened.
Step 9
Add heavy cream and continue to simmer to thicken.
Step 10
Add gnocchi and spinach. Cook for a couple of minutes.
Step 11
Season with Salt, pepper, and Italian seasoning throughout cooking.
Step 12
Top with fresh Parmesan cheese.
