Fritters
250gcarrots
grated
0.5leek
sliced
2cloves garlic
minced
½ Tbsppaprika
½ Tbspdried mint
2 Tbspplain flour
½ tspsalt
½ tspblack pepper
2eggs
whisked

Instructions
Avocado Hummus
Step 1
Add all hummus ingredients into a food processor. Blend until mixture is combined and smooth.
Fritters
Step 2
In a large bowl, combine all ingredients for the fritters.
Step 3
Heat oil in a frying pan over medium-high heat. Scoop 1/4 of the fritter mixture into the pan and flatten with a spatula. Repeat for remainder of mixture.
Step 4
Cook fritters for 3-5 minutes on each side, or until brown. Transfer to a paper-towel lined plate.
Serve
Step 5
Split hummus between two plates. Top with cooked fritters. Enjoy!
