Ingredients

1.5kgbeef chuck
or brisket, cut into large chunks

4 Tbsptamari
or soy sauce if not strict keto

2 Tbspsesame oil

2 Tbsprice vinegar
or apple cider vinegar

2 Tbspgochujang
Korean chili paste, look for a no-sugar version if possible

1 Tbspfresh ginger
grated

4garlic cloves
minced

1 tspfish sauce
optional, adds depth

1 Tbsperythritol
or keto-friendly sweetener

1 cupbeef broth

2spring onions
sliced, reserve half for garnish

1 Tbspsesame seeds

Instructions
Step 1
1. Prep sauce: In a bowl, whisk together tamari, sesame oil, vinegar, gochujang, ginger, garlic, fish sauce, sweetener, and beef broth.
Step 2
2. Slow cook: Place beef chunks in the slow cooker, pour sauce over. Stir to coat.
Step 3
3. Cook: Low for 7–8 hours or high for 4–5 hours, until beef is fork-tender.
Step 4
4. Shred & reduce: Remove beef, shred with forks, and return to the sauce. If you want the sauce thicker, simmer uncovered for 10–15 minutes or add ½ tsp xanthan gum while stirring.
Step 5
5. Finish: Garnish with spring onions and sesame seeds.
