berry cheesecake inspired porridge INGREDIENTS: ¾ cup-1 cup milk (depending on the consistency you like) 1 tbsp ground flaxseeds (or chia seeds) 1 scoop protein powder (vanilla or unflavoured) 100g mixed frozen berries 1/2 tsp pure vanilla extract ½ lemon’s zest Pinch of salt THE COTTAGE CHEESE TOPPING/FILLING 175g cottage cheese 1-2 tsp maple syrup METHOD: 1. 2. Instructions
Step 1
Blend the cottage cheese with the maple syrup in a blender,or mash with a fork until creamy.
Step 2
Make the porridge in a pot by mixing oats, milk, chia, pinch of salt, vanilla extract and frozen berries. Cook them on medium heat for around 3-5 minutes until it’s thick
Step 3
Once off the heat, mix in the protein powder and a heaped tablespoon from the cottage cheese mixture.
Step 4
Microwave 50g of frozen berries with a dash of lemon to create a compote
Step 5
Serve in a bowl, top with the rest of the cottage cheese mix and berry compote
