Ingredients

2 cupsraw mixed nuts
roughly chopped
1 ½ cupsrolled oats
1 cuppuffed millet
or amaranth or brown rice
1 cupbuckwheat groats
activated - aka 'buckinis'
⅓ cupflaxseed
½ cuppumpkin seeds
½ cupsunflower seeds
⅓ cuphoney
⅓ cupextra virgin olive oil
1 Tbspvanilla essence
½ cupcoconut flakes
or shredded coconut
¼ cupdried cranberries
¼ cupgoji berries
¼ cupcacao nibs
Instructions
Step 1
Preheat the oven to 160C.
Step 2
Combine the chopped mixed nuts, rolled oats, puffed millet, buckinis, flaxseed, and pumpkin seeds in a large bowl.
Step 3
In another bowl or jug, whisk together the honey, extra virgin olive oil, and vanilla, then pour over the dry ingredients.
Step 4
Stir to combine, and then spread out in a thin layer on baking sheets.
Step 5
Bake in the oven for 30-40 minutes, until nuts are golden.
Step 6
Leave out to cool on a wire rack.
Step 7
Once cool, stir through the coconut, cranberries, and goji berries.
