Instructions

Step 1
Grate beets and carrots into a large soup pot, and add olive oil. Sautee for about 5-10 minutes

Step 2
Chop up onions into bite size chunks, add to pot, and cook for another 5ish minutes.
Step 3
Add water and chicken broth. Bring the heat so all the liquid is bubbling but not boiling violently.
Step 4
Chop chicken, potatoes and celery, add them into the pot. Grate cabbage and add to pot.
Step 5
While soup is bubbling add in spices and the cans of beans with their water.
Step 6
Cook for about an hour until everything is soft and the flavors are all melted together. Serve alone or with bread or with a dollop of sour cream.
