Stuffed Apple Cinnamon Cream Cheese Pancakes Makes 6 servings (12 4 inch pancakes) Ingredients 1-8 oz bar cream cheese, 1 tbsp honey, 1 1/2 cups applesauce (at room temperature), 1 cup all-purpose flour, 1 tbsp sugar, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, 1 1/2 cups buttermilk (at room temperature), 3 tbsp vegetable oil, 1 large egg Directions 1. In a large mixing bowl, sift together flour, sugar, baking powder, baking soda and salt. Set aside. 2. In a medium mixing bowl, whisk the buttermilk, oil and egg, Stir into dry ingredients. The batter should be slightly lumpy. 13. Preheat oven to 175°F. 114. In a mixer, mix cream cheese and honey together. Set aside. 15. Heat a nonstick griddle over medium heat. Scoop about 1/4 cup of the batter I for each pancake on top of the griddle, allowing plenty of space for spreading. 16. Cook until bubbles form on the surface, 1-3 minutes; tum and cook until golden brown, 1-2 minutes longer. Put finished pancakes in the oven to keep warm. Repeat cooking step with remaining batter 7. When ready to serve, take six pancakes and spread the filling on each Top with another pancake and finish by adding applesauce to the top.
