Ingredients

1yellow onion
diced
stalks celery
diced
2carrots
medium, diced
4 clovesgarlic
minced
1 Tbspcashew butter
or thick cashew milk
¼ tspred pepper flakes
1 Tbsbasil
1 Tbsdried oregano
1 Tbsdried marjoram
1 Tbspdried parsley
24 ozSan Marzano tomatoes
crushed
5 cupslow sodium vegetable broth
or no
½ cupnutritional yeast
1zucchini
diced optional
9lasagna noodles
broken into pieces, optional
Instructions
Step 1
Saute onions, carrots, celery till soft. Add chopped garlic until fragrant, add cashew butter until melted, add veggie broth, crushed tomatoes, zucchini and spices. Cover and simmer 1 hour. If adding lasagna noodles, add an extra cup of water or cook the noodles separately and then add to soup.
