Step 1
Cook the ravioli: Bring a large pan of water to the boil, reduce to a simmer, and add the ravioli straight from the fridge (don’t separate them beforehand). Simmer for 3 minutes, gently turning halfway through. Drain with a slotted spoon and set aside.
Step 2
Prepare the sauce: In a large frying pan, melt the butter over medium heat. Add the leek and garlic, and sauté for 3–4 minutes until soft.
Step 3
Add the mushrooms: Cook for another 5 minutes until golden and tender.
Step 4
Pour in the cream: Stir well and let it simmer for 3–4 minutes until slightly thickened. Season with salt and pepper, then stir in the Parmesan.
Step 5
Combine: Gently fold in the cooked ravioli, coating them in the sauce.
Step 6
Serve immediately, garnished with fresh thyme or parsley.
