Sautéed Chicken Cutlets with Sun-Dried Tomato Sauce

Instructions

Step 1
marinate chicken for 30 minutes in olive oil, garlic, and herbs before cooking.
Step 2
Season chicken cutlets with salt, pepper, and paprika. Coat with bread crumbs
Step 3
Heat olive oil in a large skillet over medium-high heat.
Step 4
Sauté chicken until golden brown
Step 5
Remove chicken from the pan. Put in Airfryer @ 350 for 15 minutes

Make the Sauce:

In the same skillet, add a little more olive oil if needed.
Step 8
Sauté shallots/onion until soft, about 2 minutes.
Step 9
Add garlic and sauté another 30 seconds until fragrant.
Step 10
Stir in chopped sun-dried tomatoes, cooking for 1–2 minutes.
Step 11
Add chicken broth, thyme/Italian seasoning, salt, and pepper. Simmer for 3–4 minutes to let flavors meld.
Step 12
Reduce heat and stir in Greek yogurt or cream if using, mixing until smooth. Do not boil after adding yogurt to prevent curdling. Spoon over chicken before serving.
Step 13
Garnish with chopped parsley or basil.
Step 14
Serve with roasted vegetables, cauliflower rice, or whole grain pasta.
