1 lblean ground turkey

For the creamy mushroom, Mediterranean-style “gravy”

1 cupmushrooms sliced
1 Tbspwhole wheat flour
or oat flour
1 cupunsweetened almond milk
or low-fat milk
¼ cupplain greek yogurt
1 tspdijon mustard
salt

Instructions
Step 1
Prepare the patties:
Step 2
In a bowl, combine ground turkey, onion, garlic, parsley, oregano, paprika, salt, and pepper. Form into 4 oval patties.
Step 3
Brown the patties:

Heat olive oil in a skillet over medium heat. Sear patties 2–3 minutes per side until browned (they don’t need to be cooked through). Transfer to a baking dish.

Make the mushroom sauce:

In the same skillet, add 1 Tbsp olive oil and sauté 1 cup mushrooms sliced 5 minutes until soft. (add a splash of white wine when sautéing mushrooms for extra flavor)

Add 1 clove garlic, minced and cook 30 seconds.

Sprinkle 1 Tbsp whole wheat flour and stir to coat. Gradually add 1 cup unsweetened almond milk while whisking until smooth and slightly thickened (3–5 minutes).

Remove from heat and stir in ¼ cup plain Greek yogurt and 1 tsp Dijon mustard. Salt and pepper to taste.

Fresh thyme or parsley for garnish

Assemble and bake:

Pour sauce over the patties in the baking dish.

Bake at 375°F (190°C) for about 25 minutes, or until patties are fully cooked through and sauce is bubbling.
