6 cupsvegetable broth
or chicken broth, or water
28 ozcanned whole tomatoes
or crushed tomatoes
1cinnamon stick
or 1/4 tsp ground cinnamon
saffron

1 tspsea salt
or more to taste
½ cupred lentils
dry
½ cupbrown lentils
dry, or green lentils
½ cupfresh cilantro
chopped and divided in half
½ cupfresh parsley
chopped and divided in half
15 ozcanned chickpeas
4 ozcapellini pasta
or spaghetti pasta, broken into approximately 1-inch pieces
2 tsphoney

Instructions
Step 1
Step 1. In a large pot over medium heat, saute onion in olive oil for 5 minutes. Add celery, garlic, ginger, black pepper, turmeric, cumin, paprika, and cayenne pepper. Stir for 1 minute. Sauteing the spices allows them to bloom and deepen in flavor. Step 2. Add broth, tomatoes, cinnamon, saffron, salt, lentils, half of the cilantro and half of the parsley. Bring to a simmer, cover with a vented lip and cook for 30 minutes. Add chickpeas and pasta, cook for 5 to 10 minutes, or until pasta is cooked. Add honey and remaining cilantro and parsley. Serve with desired toppings.
