Cucumber Fritters with Spicy Hummus

Spicy hummus
100groasted red capsicum
1clove garlic
minced
0.5 x 400gchickpeas
drained
1 Tbsplemon juice
½ tspcumin
1 tspsriracha
salt
black pepper
Fritters
1 Tbspolive oil
0.5cucumber
grated
0.5leek
thinly sliced then chopped
1egg
large, beaten
¼ cupgram flour
½ tspsalt
½ tspblack pepper
1garlic clove
minced
1 tsppaprika
To serve
Instructions
Spicy hummus
Step 1
Mix all the ingredients together in a blender until combined and desired consistency is reached.
Fritters
Step 2
Place cucumber and leek to a large bowl. Add egg and mix together.
Step 3
Add flour and combine well. If the resulting batter is too dry add a little water, if too wet add some more flour.
Step 4
Heat oil in a frying pan. Spoon 1 heaped tbsp of batter into pan, repeating for separate fritters (may have to cook in batches depending on the size of your pan).
Step 5
Cooked until browned on each side, about 2 to 4 minutes on each side. Remove cooked fritters onto a plate lined with a paper towel to drain (oil).
To serve
Step 6
Serve on plates with the hummus, then garnished with some chives and chilli flakes, if desired.
