Instructions
Cook chicken
Step 1
Season chicken with salt, pepper, garlic and chicken seasoning (or onion powder)
Step 2
Heat oil (and butter if using) in a pan over medium-high heat.
Step 3
Sear chicken for 4–5 minutes per side, until golden and just cooked through.
Step 4
Remove to a plate and keep warm.
Make the sauce
Step 5
In the same pan, add the shallot and cook 1–2 minutes.
Step 6
Skin mushrooms and add to pan. Cook until soft and slightly browned (5 minutes).
Step 7
Pour in the white wine; let it bubble and reduce by half.
Step 8
Recude the heat and stir in crème fraîche (or cream) and Dijon mustard.
Step 9
Add chopped tarragon.
Step 10
Simmer 2 minutes until the sauce thickens slightly.
Finish
Step 11
Return chicken to the pan and spoon sauce over it.
Step 12
Simmer 1 more minute so everything comes together.
Step 13
Serve with potatoes, pasta bread or side vegetables of your choice
