Instructions

Step 1
Take the eggs out of the fridge and leave up to am hour until room temperature. (Or

Melt the butter in the microwave on a low setting. (I would pop a cover over it so it doesnt spatter.
Step 3
Combine all ingredients in a blender (I used a Nutribullet) and blend until smooth. You can also use a handheld immersion blender and mix in a bowl.
Step 4
Heat a non stick fry pan, keeping the heat quite low. I found the mix needed to cook low and slow to ensure the pancakes cook through and are nice and solid before you flip them.
Step 5
Add a tiny amount of oil and add in 1/4 cup of batter per pancake. I tipped the pan to spread the batter to ensure the pancakes are not too thick.
Step 6
Once bubbles form on the tops of the pancakes carefully flip them.
Step 7
Slather in butter (if you aren’t watching fat/calories) or sugar free syrup (I like Queen sugar free maple syrup) and berries.
Step 8
