Ingredients
2 servings
Noodles and Veggies
4 ozdry noodles
soba, lo mein, or whatever you grabbed
1 bunchbroccolini
chopped into 2-inch pieces
2green onions
sliced, optional
1 tspwater
for reheating later
Shrimp
10 ozshrimp
peeled + deveined
½ tspgarlic powder
salt
black pepper
chili flakes
optional
1 tspolive oil
for each shrimp batch
Garlic Sauce
Instructions
Cook the Noodles
Step 1
Boil water.
Step 2
Cook noodles until just tender (don’t overcook).
Step 3
Drain and rinse quickly under cold water so they don’t stick.
Step 4
Set aside.
Cook the broccolini
Step 5
In a large pan/wok, add a splash of water + a pinch of salt.
Step 6
Add chopped broccolini and cover for 2–3 minutes to steam.
Step 7
Remove lid and let water evaporate.
Step 8
Add ½–1 tsp olive oil and sauté for 2 more minutes until bright green and slightly crisp.
Step 9
Transfer broccolini to a bowl.
Cook the Shrimp
Step 10
Pat shrimp dry.
Step 11
Season with: Garlic, salt, pepper, chili flakes (optional)
Step 12
Add 1 tsp olive oil to the pan.
Step 13
Cook shrimp 2–3 min per side until pink.
Step 14
Remove from pan so they don’t overcook
