Instructions
Step 1
Chop veggies ahead of time. Keep onion and bell peppers separated.
Step 2
Cook ground chicken in Dutch oven or large pot until browned
Step 3
Add chopped onion. Cook until softened.
Step 4
Add peppers, tomatoes, beans, corn, and salsa to the pot. Break the tomatoes with a wooden spoon.
Step 5
Bring pot to a simmer then cover. Cook for 1-2 hours or until peppers have softened.
Step 6
Serve in bowl with cheese and sour cream!
