Instructions

Step 1
Prepare bulgur wheat: Cook according to package instructions. Fluff and set aside.
Step 2
Sauté leeks & mushrooms: Heat olive oil in a non-stick pan. Add garlic, leeks, and mushrooms. Cook until softened and lightly caramelized (about 5–7 minutes).
Step 3
Cook calamari strips: Add calamari to the pan and a squeeze of lemon. Add salt and pepper to taste. Cook quickly (2–3 minutes) until opaque and tender.
Step 4
Combine: Toss calamari, mushrooms, leeks, and spinach together. Serve over quinoa.
Step 5
Finish: Garnish with fresh parsley or dill, and drizzle with extra lemon juice.
