Instructions
Step 1
Sift dry ingredients together over wax paper.
Step 2
Beat butter and sugar until light & fluffy; add in egg yolk and vanilla.
Step 3
Mix in 1/3 at a time of flour mix, blending well each time.
Step 4
Divide dough in half. Color one half with peppermint extract and the other with food coloring.
Step 5
Roll out each half between wax paper to a 6x10in rectangle. Remove wax paper tops and invert one rectangle onto the other. Remove wax paper top and use bottom to assist in tightly rolling together doughs.
Step 6
Wrap up in wax paper or foil and chill for several hours or freeze until firm (removing 1/2 hour before slicing & baking).
Step 7
Cut into 1/4 in thick slices and place on ungreased cookie sheets. Bake at 350F for about 10 mins or until firm but not browned. Remove to cool completely on wire racks.
